It’s used for domain authentication of message sender. As some services like
mailng list manager rewrite envelope sender — at the first place, it’s domain
is not always the same as one of originator’s address — “Sender:” field was
used to keep the domain to be authorized by receiver. An example is Sender
ID.

Now “authentication” methods as above are considered historic. However,
while not all mail servers have adopted more reliable domain authentication
mechanisms (e.g. a combination of DKIM and ARC for mailing lists), we cannot
throw this old method away.
