The way Evolution handles this is by using the List-*: headers.

You may want to compare messages that do and don't work to see what the difference is.

Sympa by default adds List-*: headers, so this should work. I've used it previously with Evolution. I do however remember that sometimes Evo would just get confused if there were too many headers in the message. In fact, in the past I've found Evo to have very broken header handling (and being plain buggy anyway), so where possible I try to avoid it and use something else.

Note: With the message highlighted in Evo, you should be able to go "Message -> Mailing List" (which is right near the bottom) and it should give you all sorts of list parameters as options, such as subscribe, unsubscribe, post, etc. If it doesn't do that, then Evo is not seeing any headers (regardless if they are there or not).
