This is DMARC, a badly-designed security standard that did not take into account mailing lists.  Although Sympa correctly preserves the 'From' header and sets the 'Sender' header in line with the RFC, unfortunately the DMARC rule prevents the From header from having an @aol address even when you have Sender set.  This means you need to use the 'DMARC Protection' feature that appeared around 6.1.22, which rewrites the From header, breaking RFC but allowing DMARC to work.

The DMARC Protection setting can be set to replace all From headers, specific domains, or only those for domains which have a DMARC record published.

An alternative is to set the list to be anonymous, so that the From header is replaced by a generic list address.
