Why ist there "-request" and "at request of" in the From-address, in
mailings received by members?

This was different in Sympa version 5.4, see screenshot "Sympa54_vs_62":
lefthand side Sympa 5.4, righthand side Sympa 6.2.

The same effect can be seen in a mail to your list, see below:

(Von = From) <---------------------------

(im Auftrag von = at request of)

(Gesendet = Sent)

(An = To)

(Betreff = Subject)

Von: address@concealed
[address@concealed]" im Auftrag von "Chris Peck

[address@concealed]

Gesendet: Sonntag, 10. August 2014 22:08

An: address@concealed

Betreff: [sympa-users] list_check_smtp alternative

Is this a matter of configuration or a general change and unavoidable?
