Hi Nick,
That's a strange behavior ; messages sent via Sympa should not get altered at all. The only situation where Sympa might alter a mail body is if the list has a header/footer defined with footer_type set to "append" (see http://www.sympa.org/manual/parameters-sending#footer_type).
I suggest the following process to find out what is wrong :
1. ensure that Sympa is the culptrit : try sending the same message
to both the list and yourself and check if both versions differ
2. try sending the message to a different mailing list
3. get Sympa to send you back the message (from the archives) and
check the mail source
4. check your mhonarc-ressources.tt2 configuration file
If you still need support on this, please send sample messages that show the problem.
PS : you did not mention the version of Sympa you are running?

One of the lists on our server is in Spanish, and we have been
struggling with getting accented characters to work - emails sent in to
the server have their accented characters stripped out of them, while
messages which are pasted directly into the 'post message' box using
wwsympa appear correctly when emailed out but display with things like
"Özsögüt" when viewed on the web archive.
Everything, so far as I can tell, is set to use UTF-8 character set -
the server, apache, sympa, my mail client, my desktop PC. So why am I
not seeing the characters correctly?
