Your issue is that you're using a CNAME as the mail host name.

As I recall, the SMTP specifications require that CNAMES be
resolved to the underlying host names in all out-going email address.

Try using an MX record for "lists.foo.com" to get the mail
handled correctly, and an A record for the http interface.

Short answer, it's your MTA, not Sympa that's translating the
email addresses from their alias to the canonical names.
