Does Sympa purge the spool where it's storing emails waiting to get included within the digest at midnight?

No but if you configure the list to send a digest every monday at 23:59, then Sympa might miss some digests because it won't send it at 23:50 and won't send it at 0:01 the next day (because it's no more monday). This period of time might be too short.

Ah, I follow - it's in case Sympa doesn't process the digest request in time.

If a digest is split, the trigger is still the time and days configured ; therefore all digest messages are sent at the same time, ie hypothesis number 2.
