listname-owner is solely used as the return-path for messages, to collect bounces.
On the other end, listname-request is used to contact the list owners.
And finally, is there a way that I might be able to switch the two? Is it as simple as pointing listname-owner at "|/etc/smrsh/queue address@concealed" rather than having it pipe to bouncequeue?
If you do so, you'll just send bounces to the list owners and requests to the bounces manager. Currently Sympa does not provide a parameters to set -owner and -request, therefore you should change the code where it is set :
* for -request, mainly online help and your mail aliases template
* for -owner, only the sendmail call that sets the return-path
