Ciao Edd,

I checked it on my desktop which is a debian (testing version and repos) 
because our sympa production servers are CentOS

antonelli@gonzoland:~$ apt list sympa
Listing... Done
sympa/testing 6.2.40~dfsg-3 amd64

and

antonelli@gonzoland:~$ apt show sympa
Package: sympa
Version: 6.2.40~dfsg-3
Priority: optional
Section: mail
...
APT-Sources: http://ftp.debian.org/debian testing/main amd64 Packages

and even if I try your command

antonelli@gonzoland:~$ apt-cache showpkg sympa
Package: sympa
Versions:
6.2.40~dfsg-3 
(/var/lib/apt/lists/ftp.debian.org_debian_dists_testing_main_binary-amd64_Packages)
 Description Language:

so I'd say it's for sure in testing repos but I cannot say about Ubuntu
