The DMARC protection arrived in about version 6.1.20 I think, but the setting names changed a little in 6.2.  You might want to check the manual for what options you get.

The settings can be done at list, robot or global level.

https://sympa-community.github.io/manual/customize/dmarc-protection.html
https://sympa-community.github.io/gpldoc/man/sympa.conf.5.html#dmarc-protection

dmarc_protection    all
dmarc_protection_phrase    display_name
dmarc_protection_other_email    anonymous_sender@my_server_domain

The feature is supposed to work by removing the sender domain from the From header, allowing strict DMARC checks to pass.  This is because the DMARC standard (incorrectly) specifies checks should be done against the From domain, even if a Sender header is present, which breaks the 'secretary scenario' used by mailing lists.  However it can also be used for concealing the sender email address without removing the name phrase.
