Yes, why not? This is just a matter of MTA configuration. When Sympa sends a mail, it calls the MTA command line. So it is up to the MTA to correctly route the mails.
Can I have a separation between the Web Interface and the Sympa daemon
in 2 different servers?
Not yet. Well, not yet easily. See, the daemons and wwsympa share a lot of data on the filesystem (list configs, main config, bounces, etc.) So they need to be able to access and / or modify these files. that's why it's easier to put them both on the same server.

But  you can do it as long as you make these files available through NFS. In this case, you should set the value of the "lock_method" sympa parameter to "nfs", so that Sympa uses NFS locking primitives when accessing files.
