Hi,

I have probably a stupid question but I'm currently set up new systems
and now the main mailserver is on a a different host than Sympa should
be and my question now, is that possible?
Yes indeed.
I.e. what do I need to do?

* Obviously Sympa-host needs to be able to send email (possibly via
smarthost)
* Is it possible to accept the emails on the mail-hub (postfix) and
simply forward the email then to Sympa-Host where a tiny MTA runs?
Yes that a good configuration. You probably need to customize the way alias are generated, see http://www.sympa.org/manual/mail-aliases . Be aware : your MX must reject message for unkown list in order to prevent backscatting (unusefull delivery report). This suppose your MX to known the list of valid lists.
