1 - It uses the setting you specify in the auth.conf file
This usually is set to a particular user.
2 - No - sympa never stores the ldap password
3 - Sympa does the following steps:
A - bind with credentials that you specify in auth.conf
B - look up the user attempting to login to verify that it exists and get
that users dn
C - bind with the user's dn and the password they gave
D - look up the attributes specified in auth.conf as the user

1.When sympa bind to Ldap server, Sympa do an anonymous bind?Or contact
Ldap as particolar user (that can be memorized in Ldap tree)?
2.When sympa execute query to question a particular Ldap branch, Sympa
memorizes in its database user e-mail and password? if this password is
encrypted,Sympa memorize this encrypted password?
3. When an Ldap user do login in Sympa, he write his clear password.
Then Sympa do the hash of this password and comapre hash with the hash
in its database?
