Ok - thanks for the helpful replies. I see that there is not 'easy' way to do 
it, such as a simple 'expiry date' option through the list config. Will 
submit a feature request, this function would be very useful for our 
course-related lists etc.

That's an idea actually!
If you add an implicitly included scenario (see : 
http://www.sympa.org/wiki/manual/authorization-scenarios#scenario_implicit_inclusion
 
) in a place that makes it applicable to all the lists you want to 
expire, you can define a rule looking like this:

older (<TheExpiryDate>, [current_date])         -> reject,quiet


You can do it for all scenario types, leaving the list completely 
unusable after a certain date. Note that the dates are epoch based values.
