We've found that you can use "&nbsp;" as the real name to hide people -- it leaves a blank line on the moderator list, but most people don't notice.

If I understand the problem correctly, you could effectively hide the list of moderators by giving them all "real names" that are meaningless -- like "x" or "moderator 1" or something. If an owner or moderator has an entry in their real name field, then that gets displayed instead of their email address in the stats box; making them generic could thus provide some privacy.
