Yes it is possible to make a single list using all kind of external data source and also to mixe that way to collect list member email and manual ADD DEL SUB SIG. All you need is to configure your list with "user_data_source include2"
3) If I pull dynamic subscriptions from LDAP, where or how do I define in an LDAP entry what posting rights that person has? For SQL, it's easy, because it's just another field in an SQL record. But I'm unsure how that would happen in LDAP. Ideas?
From LDAP Sympa can fetch user attributes but rights like posting right are defined in Sympa itself in files named "scenario". Basically you will probably use "send.private" scenario that accept message only from list members and you will define the members a LDAP filter based on any kind of user attributes. But if you need somme members to be able to send messages and some others not, the will need "search filters" and make your own scenario. All of this is standard Sympa features but you need to investigate in the reference manual.
