This seems perfectly reasonable.

You will simply have two decorrelated servers hosting different sub-domains, wo there should be no problem.

Server B will host one website and a mail server. It will also host Sympa. The website on server B will also host the mailing list interface for all domains with websites on server A.

Setting up my DNS records will take careful planning but I think I can do it.
