We have experienced something similar; it indirectly involves the Sympa web interface.  We created a message moderation web interface that was largely adapted from code in the sympa web interface. The main difference is that our interface has a message content editor (plain text, nothing fancy). 

We noticed that when message containing attachments are sent from outlook and edited (even if no changes were made) with the interface, the distributed message (although intact before it left the Sympa server) would get stripped of its content (except for the images) by the Exchange server.   After further examination, we noticed that the messages from outlook contain non-printable characters that were getting changed when edited by our interface.

To fix the problem, we added a line or two of code to remove non-printable characters from the edited message as it was saved.

We have had issues with non-printable in email for many years; we used to have similar message corruption problems when someone copied content from a MS Word document and pasted it directly into their email message; outlook was not the only client we had this problem with--we also had the same problem when MS word content was pasted into Eudora email client.

While we were evaluating the issue with the editor interface, we discovered that the last few versions of Outlook can be configured (maybe by default) to use MS Word editor as its message editor.
