Like I said: through th sympa.conf: 
http://www.sympa.org/manual/conf-parameters/part1#listmaster
admin_table is just a cache of what you put in sympa.conf.

This will depend on your sendmail install. See:
http://www.sympa.org/manual/mail-aliases
Any list aliases will then be created by Sympa itself.
