Not yet and that's too bad. We plan to make it possible, but that must
be done in such a way that former Sympa users won't lose their beloved
preexisting headers and footers in the process.

add a footer along the lines of

'You are subscribed to list [% list.name %] as [% user.email %].

To unsubscribe from this list please either visit our website or send
a blank email to [% list.name %]-unsubscribe@[% list.host %].'

No yet. That would be done along with the preceding point.
I'd like to make sure that all of our lists have the details and
options to unsubscribe and preferably if it cannot be turned off or
edited by the various list-owners although that is less important at
the moment.

You can prevent list owners from editing footers and headers by tweaking
the edit_list.conf file
(http://www.sympa.org/wiki/manual/list-creation#list_editing).
We plan to convert footers and headers files into templates. This way :
- you could use parameters inside them;
- they could have a default value for any list inside a host or virtual
host.
