You should make the documentation by removing doc/sympa.tex and "make 
documentation" path will reflect your installation, but the "make 
documentation " require many tools related to latex. That's why we 
distribute the documentation as it was generated on our dev machine and 
do not include documentation generation processs into default "make" 
operation.
