I suspect it would be simpler to stop using <list>-owner as the bounce 
address and just keep it for contacting the admin. <list>-bounce or 
<list>-return would seem more sensible as bounce addresses to me.

It would be nice if these things were configurable, but at present most 
such addresses are hard coded into Sympa.
